Black Swan chefs gather for dedicated training event

More than 20 of Black Swan's chefs and cooks gathered at a hotel in King's Lynn, West Norfolk for an intensive training day.

The day was hosted by Brakes Ltd, part of the Sysco Group, who have been providing top quality food and catering supplies to the foodservice industry for more than 60 years and have grown into the leading foodservice wholesaler in the UK.

Those who attended were treated to some excellent presentations about nutrition, the mealtime experience including food and table presentation, food wastage, fortification as well as in-depth, hands-on support for residents needing texture-modified meals, often known as IDDSI (International Dysphagia Diet Standardisation Initiative).

Representatives from Brakes were also on hand to answer questions about assistive crockery and cutlery for residents with hand mobility issues and for those living with dementia. Others heard how Brakes supply fresh fruit and vegetables to our homes so that our residents can enjoy healthy, nutritious meals made with fresh ingredients.

Feedback was extremely postitive with attendees saying that they enjoyed the day and felt engaged and supported and that having a day dedicated to supporting them in their role made them feel wanted and motivated to continue to provide high quality meals to the residents.
